Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, combine the rolled oats, whole wheat flour, brown sugar, baking soda, baking powder, cinnamon, and salt.
- In another bowl, whisk together the eggs, applesauce, milk, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the diced apples.
- Divide the batter evenly among the muffin cups.
Baking
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.
Notes
These muffins can be stored at room temperature for up to three days. For longer storage, freeze them wrapped in plastic wrap and placed in a freezer-safe bag for up to three months.
