Ingredients
  

Dry Ingredients
  • 1.5 cups rolled oats Use quick oats if preferred.
  • 1 cup whole wheat flour Can substitute with gluten-free flour for GF version.
  • 0.5 cups brown sugar Can substitute with honey or maple syrup.
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
Wet Ingredients
  • 2 large eggs Can be substituted with flaxseed meal or applesauce.
  • 1 cup unsweetened applesauce
  • 0.25 cup milk (or plant-based milk)
  • 0.25 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup diced apples Any variety of apple can be used.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine the rolled oats, whole wheat flour, brown sugar, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the eggs, applesauce, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the diced apples.
  6. Divide the batter evenly among the muffin cups.
Baking
  1. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.

Notes

These muffins can be stored at room temperature for up to three days. For longer storage, freeze them wrapped in plastic wrap and placed in a freezer-safe bag for up to three months.
